Madras

Create a typically hot, fiery and tangy Madras, using my Madras curry kit.  I love this with lamb, but feel free to substitute with chicken, vegetables or even paneer.  This is a challenging dish, but once mastered will quickly become one of your favourites!

You'll also need:

  • Chicken, lamb, beef, fish, paneer or vegetables
  • Vegetable oil
  • Onion
  • Garlic
  • Ginger
  • Green chillies
  • Tinned tomatoes
  • Salt
  • Fresh coriander

  • Cassia bark
  • Chilli powder
  • Cloves
  • Coriander seeds
  • Cumin seeds
  • Curry leaves
  • Fennel seeds
  • Fenugreek seeds
  • Mustard seeds
  • Tamarind
  • Turmeric
